Few things freak people out in the kitchen as using offals. Offals (organ meats) are important for 2 main reasons. 1. They honor the life that was given so we could eat meat. Instead of eating only our favorite cut, we utilize and acquire nourishment from the whole animal, 2. Offals often have additional nutrients and are powerhouses of concentrated vitamins and minerals. In terms of taste and texture, tongue is arguable the best springboard. It does require an extra prepping step. In the video below I discuss how to properly prep tongue.
